Nothing makes me feel more like I’m winning at life then having my act together in the kitchen. These menu plans and regular grocery shopping days make such a difference, but I’ve been feeling totally overwhelmed by our refrigerator lately. So this month we’re going to add some organization (like these bins) and try being better about prepping fruits and veggies for the week (been eyeing these sink colanders). Our pantry organization has been a lifesaver, so I know adding a few storage items in the fridge will be helpful!
Menu plan below & and our menu plan notepads are in the shop!
- NEW RECIPE MONDAY | Butter Chicken (or a slow cooker option) with Rice & Simple Salad
- TACO TUESDAY | Breakfast Burritos (for dinner – make extra for breakfast or to freeze!)
- FAMILY FAVE WEDNESDAY | 30 minute Yaki Udon Stir Fry
- THROWBACK THURSDAY | Leftovers
- PIZZA PARTY FRIDAY | Takeout Pizza and this Mocktail
- SUPPER CLUB SATURDAY | Chicken Noodle Soup (have the kids make a side, fun drink, or dessert!)
- COZY SUNDAY | Pork Chops in Creamy Mushroom Sauce
- BREAKFAST | breakfast burritos, overnight oats, & yogurt, granola (classic recipe or with peanut butter), & banana/berries
- LUNCH | The usual Turkey or PBJ Sandwiches, whatever fruit looks good at the store, yogurt, & snacks!
We followed this meal plan last week just so I could make adjustments or share notes when needed… documented of a few of our meals.
- one | chicken noodle soup (linked above)
- two | pizza night (highly recommend lighting candles and pouring sparkling cider — bubbles and candles make any meal a party)
- three | the 30 minute Yaki union noodle dish was a success!
- four | homemade pancakes (in heart shapes): 2 cups flour, 3 or 4 tablespoons honey, 4 teaspoons baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon salt, 6 tablespoons butter (melted and cooled), 1 egg, 1-3/4 cup milk, and 2 teaspoons vanilla extract. Mix dry ingredients together. Add wet ingredients and whisk together (without overdoing it) until smooth and slightly lumpy (should be able to pour easily, but not runny). If too thick add splashes of milk, whisking in between, until desired consistency. Pour approx 1/4 cup of batter per pancake on a lightly greases pan over medium (or medium-low) heat. Flip when bubbles appear and underside is golden brown.
- five | granola (so good and so worth the time!)
- six | more chicken noodle soup :)
Chili, sheet pan fajitas, and creamy sausage pasta will be on the menu next week!
xx, Rae
