BREAKKIE CLUB: EASY OVERNIGHT OATS RECIPE

We’ve all been on very different morning schedules around here, which makes breakfast the longest meal of the day, in addition to the most important. While the younger two are more than happy with bowls of cereal a few mornings a week, the rest of the crew acts like I’m subjecting them to torture when cereal is the only option. Personally, I’m an avid member of the cereal club (mostly as a snack or dinner, lol) but can’t help feeling a little proud that everyone else has come to the conclusion that it really isn’t the best way to fuel their bodies for the day (sigh). The only downside is that that means someone has to actually make or provide more nourishing options and as we all know, feeding a family 3 meals a day plus a snack, is an actual full-time job.

The closest I’ve come to a solution (not to be confused with a perfect solution) is to keep our kitchen stocked with a few continental breakfast inspired options. Lately that’s included: sausage + croissants, hardboiled eggs + smoothies, and overnight oats + fruit! Keep scrolling for the recipe and pin it for later!

EASY OVERNIGHT OATS RECIPE

You’ll Need:

  • 3/4 cup rolled oats (we like Bob’s Red Mill)
  • 3/4 cup milk of choice (plus a little more depending on desired consistency)
  • 3/4 TBSP chia seeds (optional but highly recommend)
  • 1 TBSP nut butter of choice
  • 1 TBSP honey, maple syrup, or sweetener of choice
  • Glass jar, container (used these for camping), or Tupperware
  • Chalk pens, to write on jars (very optional)

Here’s How:

  1. In a jar or container with a lid (that you can shake), combine oats, chia seeds, nut butter, and honey. Then add milk of choice (coconut is my favorite!). TIP: instead of measuring the milk, I usually just pour until all dry ingredients are covered, not floating like cereal, but just covered.
  2. Place lid on jar and shake well!
  3. Refrigerate for 4 hours to overnight. Good for up to 5 days, assuming the milk you used is good until then too.
  4. To serve, top with fruit, sprinkles, shaved coconut, chocolate chips, etc. and eat straight from the jar!

YOU’LL NEED:
avocado oil, as needed for cooking
1-1/2 pounds chicken breast or tenders, thinly sliced (like you would for stir fry or fajitas)
1 package dried pad thai rice noodles, cooked to package directions
2 cloves garlic, minced
1/2 onion, sliced
2 eggs, gently whisked
1 cup bean sprouts (plus more for topping)
1/2 cup firm tofu, cut into bite sized pieces (optional IMO)
1/4 cup garlic chives, cut to inch size pieces
1/4 cup peanuts, roughly chopped (plus more for topping)
2 limes, cut into wedges for serving
ground chilli or cayenne pepper, to taste (for those that want extra stars – optional)
1/2 cup pad thai sauce* (see note)
HERE’S HOW:
Prep toppings, as desired, setting aside bean sprouts, peanuts, and lime wedges.
Heat avocado oil over medium-high heat and sauté onions and garlic for a few minutes. Reduce heat to medium and add chicken. Cook most of the way through. Move chicken mixture to one side of pan and pour egg into the other. Scramble before mixing everything together (like you would for fried rice). Cover and let sit while you prepare noodles.
Prepare noodles according to package directions. In a large pot, add noodles and avocado oil (to taste) and stir fry for a few minutes. Add bean sprouts, chicken mixture, tofu (if using), and sauce. Toss together until sauce is distributed evenly. Add chives and peanuts and toss gently.
Serve immediately with toppings of choice!

Mondays are for stocking the pantry! And since our Mondays are for stocking the pantry! And since our bins and labels needed a refresh, I thought I’d share the process 😋 We organized our pantry about a year and a half ago (with the help of @finding.order ) and have never looked back! I was nervous about my ability to stay on top of things but have found that it makes grocery shopping and cooking so much easier because you can actually see what you have and what needs to be restocked.
