We’ve discovered the next best thing, or maybe even equally best thing, to wood-fired pizza and you don’t need anything other than a grill and some ingredients to make it happen at home! Depending on how many pizza toppings you keep on hand, it’s also really easy and I love handing over the cooking part when Johan’s home, too. I’m partial to fresh pizza dough from a store or restaurant, but flatbread works too. I’ll share the how-to below along with our favorite toppings, below! And a meal plan for June, too.
HOW TO GRILL PIZZA
Or I should specify, this is how we grill pizza, there may be lots of other ways!
You’ll Need:
- Pizza dough + flour (or flatbread)
- Sauces: white sauce, pizza sauce, pesto, bbq sauce, and olive oil
- Toppings: pineapple, bacon, basil, pancetta, pepperoni, salami, sausage, chicken, cilantro, basil, arugula, black olives, goat cheese, mozzarella, sautéed onions, sautéed mushrooms
- A good bottle of wine! (optional)
- Popsicle sticks + sharpie for keeping track of personal pizzas! (optional)
Here’s How:
- Roll out the pizza dough… I like to make it a little thiner than how I want the pizza crust to be because it will puff up a bit. Then grill one side on high for approx. 2 minutes. While crusts grill, write names on popsicle sticks.
- Top your pizza, grilled side up! Place your popsicle stick with name on top.
- Lower heat and return to grill. Cook until cheese has melted and crust is to desired grilled-ness 😜 Enjoy!
I asked people on Stories last week how they keep track of personal pizzas while they bake/grill and received so many good ideas! Ultimately I decided to try popsicle sticks because it seemed like the easiest way to get the kids involved. It worked so well for our family that I can hardly wait to throw a pizza party with friends and pull out the popsicle sticks and sharpies!!!!!

It’s finally warm enough to start making two of my favorite breakfast dishes, overnight oats and smoothie bowls! Toast and eggs (however you like them) and waffles or French toast with toppings!

My kids have been doing a lot of snacking for lunch, or eating fruit with a carb-filled side or breakfast or dinner leftovers. Thinking we’ll stick to that!
