Happy day after Easter! I was so tempted to skip my meal planing routine yesterday, but ended up polling the kids for ideas on our drive to Gigi and Papa’s house and I’m so glad I did! This week feels fun and effortless (minus the muffin tin I’ll have to wash after meatloaf night) and I just ordered salmon from Eva’s Wild (my brother-in-laws business) for Sunday’s dinner (yum). Feeling productive and ready for the week y’all! LFG!
APRIL 1st – 7th MEAL PLAN:
- PIZZA PARTY MONDAY | Homemade Pizza (Gluten Free Dough & Classic Dough)
- TACO TUESDAY | Burrito Bowls
- FAMILY FAVE WEDNESDAY | Mini Meatloaves
- THROWBACK THURSDAY | Leftovers :)
- FONDUE FRIDAY | The kids requested pretzels and cheese so decided to round it out with more options to dip. Grabbing inspiration from this post. (P.S. you don’t need a fondue set to make fondue. I keep the cheese dip in a saucepan and quickly warm it up on the stove if needed.)
- SUPPER CLUB SATURDAY | Jersey Mike’s or homemade sandwiches, crudités, fruit, and chips for a busy sports day!
- COZY SUNDAY | Salmon with Basil Sauce and Tomato Salad (this salad also looks good)
- BREAKFAST | Energy Bites, Egg Bites, Waffles, Fruit, Homemade Granola and Yogurt
- SNACK & LUNCH | Turkey Sandwiches, Costco Flautas, Energy Bites, Guacamole and Chips, Popcorn, Fruit, Yogurt & Granola, Hummus, Naan Bread, Carrots, Quinoa Chicken Salad
Happy Monday and April 1st! Feels right to start a new week and a new month on the same day, doesn’t it? You know if we had 13, 28 day months, we could always start a new month on a Monday and Easter could mark the New Year (making the 365th day of the year) which would mean the New Year would begin in the Spring, which also feels right (new year, new life, new growth, flowers blooming, sowing seeds, etc.). Whoever came up with our current calendar really over-complicated things, lol. Who wants to start the petition?
