HAPPY SUPER BOWL SUNDAY!!! Whether you care about the game or not I hope you get to partake in all the yummy food and fan fare and maybe a bevy or two! And for those that will mostly be pretending to care about the game, but would appreciate the option to do some multitasking (would it be weird to bring my basket of unmatched socks to our friends SB party to match!? Ha!) I figured I should get this meal plan up for you as I will definitely be making my shopping list this afternoon while pausing in-between to watch Mahomes do his thing and wait for the halftime show…. GO TEAM!
WEEK 1
M | Sesame chicken noodle stir fry (30 mins!) or THIS sesame noodle bowl (hard to choose!)
TU | Chipotle salmon tacos (or sub for other fish or meat)
W | Make your own flatbread (love this combo for the adults!)
TH | TJ’s Creamy Mushroom + Asparagus Dumpling Skillet (hello dinner in 20!)
F | DAD’S CHOICE
SA | TJ’s creamy polenta shrimp bowls
SU | eat out or takeout/leftovers, please!
WEEK 2
M | Spaghetti margherita or Mushroom chicken parmesan pasta
TU | Chicken fajita salad – use ingredients to make regular fajitas or quesadillas as another option :)
W | Tuna melt sandwiches
TH | Sheet pan TJ’s cauliflower gnocchi with chicken sausage + broccoli (We tried this a couple weeks ago and it’s delish… even the kids liked it, but I did buy a package of regular gnocchi for them just in case. Also, if you have an air fryer try this recipe — YUMMMMMY!)
F | VALENTINE’S DAY + DAD’S CHOICE (Will be highly recommending mac + cheese for the kids + takeout and date-night-in for us!?)
SA | TJ’s easy gyro wraps (Just be sure to add cucumber, feta + red onions to your shopping list as toppings! Or try this gyro recipe.)
SU | eat out or takeout/leftovers, please!
WEEK 3
M | Greek chicken stuffed pitas (calls for shredded rotisserie chiken but would probably work with canned chicken!) with fries and side salad
W | My almost famous arugula salad (+ chicken strips for the kids)
TH | Party nachos (again)! Because they’re that good. Start with this carnitas recipe or a package from costco or leftovers korean pulled pork from tuesday dinner, then layer on all the yummy toppings over tortilla chips (cheese, sour cream, black beans, onion, avocado, cilantro, and cotjita cheese)
F | DAD’S CHOICE
SA | Pizza picnic in the family room!
SU | eat out or takeout/leftovers, please!
WEEK 4
M | These spring rolls (could add rotisserie chicken) or sandwiches from our favorite shop
TU | Huevos rancheros
W | Homemade mac + cheese + side salad
TH | Asian quinoa meatballs or stuffed peppers (from costco!?)
F | DAD’S CHOICE
SA | I’ll be out of town so dad’s choice again! (Try this pan seared salmon tho!)
SU | FIRST DAY OF MARCH!!!
Been training them to “cheers” since they could hold a sippy cup. Just as cute of a party trick as big kids, but I definitely miss those chubby fingers and belly laughs!
Do you guys give toasts, do cheers, share highs and lows or say grace at dinnertime? We usually do a combination but always try to say grace even if we’re eating out or don’t remember until we’re halfway through a meal.
BREAKKIE |
Found this egg + bacon pastry recipe on pinterest and it looked too good not to include, smoothies (making a big comeback this month, I can feel it!), steel cut oatmeal, and of course waffles for heart day breakkie using this waffle iron (highly recommend getting two + they’re only $10!)
LUNCH |
Leftover waffles, flautas (from costco), turkey + avocado sandwiches or PB+J’s with yogurt or string cheese, potato chips, pretzels or cheddar rockets/fishies/bunnies, fruit and cucumbers or carrots or black olives (pretty classic!)
SNACK |
Going to pretend we’re french this month and eat something sweet after school (aka goûter) to replace any sweet treats we might have after dinner. I’ll explain more later this week but I’m thinking muffins, chocolate milk, nutella (or other chocolate spread), chocolate croissants, valentine popcorn, banana pudding, etc. :)
A little flash photography from our pizza picnic last week is giving me all the old school vibes! Don’t they look a little like they could have been taken on film? If only we had red pupils :)
Excited about being in the kitchen this month, how about you!?
xo, Rae
PS — Have you picked out your valentines yet!!!?
Heather
Just made the TJs shrimp and polenta. SO good. Turns out Amanda and I are both doing your meal plan- loving it so far!
