If you remember from last week, I had a sad (but necessary) revelation about how much we were spending on food and since we budget 2 weeks at a time, this week I was hoping to save a little money. After spending a few hours looking up “cheap healthy dinners” on Pinterest and then doing the math (it was not math-ing in my favor), here’s what I discovered. Unless you plan on eating rice and pasta (sans the meat and fresh produce most nights), the best way to save money is to check (and clean out!!!) the fridge and pantry each week. Then plan meals around items you already have. In addition, making a meal you can stretch for two nights (like Saturday’s dinner) or meals that use similar ingredients, is a bonus. This week the sausage and other toppings for our omelets and flauta night, were also used with the chili and chili cheese fry night (like cilantro, cheese, avocados, and tomatoes). Repeat with lunch and breakfast ideas. Less waste, less money, less prep, and more room in the fridge!
Here’s the meal plan for the week!
- MONDAY | Costco Flautas, Guacamole, Chips, and Fruit
- TUESDAY | Breakfast for dinner – we grabbed what we had in the fridge and made Omelets :)
- WEDNESDAY | Egg rolls in a bowl (so good!)
- THURSDAY | Leftovers – or Chicken Sandwich Melts (double recipe to use for weekend lunches!)
- FRIDAY | Mac and Cheese and Rotisserie Chicken (Cheaper than good pizza, the kids are equal amounts happy, and is pretty quick to throw together.)
- SATURDAY | Double batch of your favorite Chili! Serve with fries and toppings during the Super Bowl!
- (SUPER BOWL) SUNDAY | Chili Cheese Fries
- MONDAY PREP | Make guacamole. Prep fruit for snack/lunches/sides, toppings for omelets, and cabbage and carrots for wednesday dinner.
- FRIDAY PREP | Grate cheese and pull meat from rotisserie chicken. Prep what you can for chili (depending on recipe) and toppings for Saturday and Sunday.
