HAPPY HOUR: HONEY WHIPPED GOAT CHEESE WITH SLICED APPLES & BREAD

The only thing better than goat cheese crumbles, (usually on a salad) is goat cheese that’s been whipped. (like your hs school bf – sorry I couldn’t help myself!) Add few drizzles of honey and rosemary to garnish and plate with sliced apples, pears, and/or baguette. You’ll have one really simple and yummy appetizer for your next girl’s night, date night in, or get-together with friends.

Just a heads up that this is not a fave in my kids’ book (which is kinda nice for the adults to not have to share), but we have a couple other apple dip options you could add to the mix! Try this CREAMY PEANUT BUTTER APPLE DIP or one of these CANDIED APPLE DIPPERS. They do not disappoint!

Just added these metal trays to the shop and they are perfect for plating yummy snacks and apps!

HONEY WHIPPED GOAT CHEESE WITH APPLE & BREAD SLICES

Cheese and happy hour snacks are a love language around here and this recipe checks both boxes. Plus, it comes together so quick and easy!

YOU’LL NEED:

  • 4 ounces goat cheese log, softened at room temp
  • 1/4 cup cream cheese, softened at room temp
  • 2 tablespoon heavy whipping cream
  • 2-4 apples, thinly sliced
  • 1 baguette, sliced
  • 3+ tablespoons honey, to taste – plus more to drizzle

HERE’S HOW:

  • Set goat and cream cheese out to soften. Once soft, add to medium bowl or stand mixer along with the heavy whipping cream. Mix on high for 3 to 5 minutes until light and fluffy.
  • Add honey (to taste) and mix until combined. Cover and store in the fridge until ready to serve.
  • When ready to serve, add a drizzle of honey (over the top), rosemary (if desired), and apple and bread slices for dipping. Voilà!

Recipe is below to save for later or you can comment WAFFLES and I’ll send the recipe straight to your DMs! 

CRISP & FLUFFY HOMEMADE WAFFLE RECIPE

YOU’LL NEED:
2 cups flour
1 tablespoon baking powder
2 tablespoons sugar
2 eggs (divide egg and yoke)
1-2/3 cup whole milk
1/3 cup butter, melted
2 teaspoons vanilla extract
TOPPING IDEAS: butter, maple syrup, whipped cream, *sprinkles, peanut butter, jam, *cacao nibs, chocolate chips, powdered sugar, berries, bananas, cinnamon, sliced peaches, fried or scrambled egg, etc.

HERE’S HOW:
Preheat your waffle iron and melt butter over low, if using stovetop.
In a large bowl, combine all dry ingredients: flour, baking soda, baking powder, and sugar. Whisk together.
Divide the egg yolk and whites into two separate medium sized bowls.
Add the milk, butter, and vanilla extract to the yolk bowl and mix to combine.
With a hand or stand mixer, beat the egg whites on medium-high until stiff peaks form. Should only take a couple minutes and makes the waffles so fluffy!
Pour yolk and milk mixture into the dry ingredients and stir or whisk until combined, being careful not to over-mix. Add the egg whites and fold them into the batter gently.
Heat oven to 250-275 degrees to keep cooked waffles warm and crisp. Lightly grease waffle iron (I like to brush on a little butter). Use a measuring cup to pour batter onto waffle iron, until wells are almost covered. Close the iron and cook for about 4 minutes or until golden brown. (Tip: This is a great time to prep toppings or tidy up the kitchen. If you’re like me though, be sure to set a timer!)
Place cooked waffles in a single layer, directly on rack in oven. When ready, top and serve!
