CHRISTMAS FETTUCCINI RECIPE

Ready for our take on Christmas Fettuccini?! Inspired by my favorite Christmas movie (if it’s even legal to have a favorite) and fancied up with homemade Alfredo sauce and yummy toppings. Only thing left to do is drink wine out of the bottle at the grocery store, befriend a witty elderly man, make a blanket fort (including twinkle lights and paper stars), and find the perfect LBD to wear to NYE.

Or you could just whip up a batch, turn on The Holiday and cozy up for a nice date night in… Keep scrolling for the recipe!

CHRISTMAS FETTUCCINI (ALFREDO) RECIPE

Serves 4-6, takes 20-30 minutes start to finish

You’ll Need:

  • Fettuccini Noodles (I like the fresh ones in the cooler section at the store and my kids love angel hair, but any pasta noodle works!), cooked according to package directions
  • 1 pint whipping cream (or 2 cups)
  • 4 oz cream cheese
  • 1/2 cup butter
  • 1 cup parmesan cheese, grated
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 lb bacon, cooked and crumbled
  • Optional toppings or garnish:
    • fresh basil
    • parmesan
    • sautéed shallots and diced tomatoes that also taste good tossed in pasta with a little extra olive oil, salt, and pepper, if you’re wanting to skip the rich Alfredo sauce
    • Serve with wine and sparkling cider!

Here’s How:

  1. In a saucepan over medium heat, whisk together the butter, cream cheese, and whipping cream until melted.
  2. Add parmesan, garlic, and remaining seasoning. Whisk until smooth and slightly thickened – about 3-5 minutes.
  3. Toss with pasta and top with bacon, parm, basil, and/or sautéed tomatoes and shallots as desired.

*Alfredo sauce is adapted from this recipe.

BETTER THAN TAKEOUT CHICKEN PAD THAI 🍜🤍 made BETTER THAN TAKEOUT CHICKEN PAD THAI 🍜🤍 made with healthy ingredients, lots of love, and good mems in the kitchen. (RECIPE BELOW OR USE LINK IN BIO)

YOU’LL NEED:
avocado oil, as needed for cooking
1-1/2 pounds chicken breast or tenders, thinly sliced (like you would for stir fry or fajitas)
1 package dried pad thai rice noodles, cooked to package directions
2 cloves garlic, minced
1/2 onion, sliced
2 eggs, gently whisked
1 cup bean sprouts (plus more for topping)
1/2 cup firm tofu, cut into bite sized pieces (optional IMO)
1/4 cup garlic chives, cut to inch size pieces
1/4 cup peanuts, roughly chopped (plus more for topping)
2 limes, cut into wedges for serving
ground chilli or cayenne pepper, to taste (for those that want extra stars – optional)
1/2 cup pad thai sauce* (see note)
HERE’S HOW:
Prep toppings, as desired, setting aside bean sprouts, peanuts, and lime wedges.
Heat avocado oil over medium-high heat and sauté onions and garlic for a few minutes. Reduce heat to medium and add chicken. Cook most of the way through. Move chicken mixture to one side of pan and pour egg into the other. Scramble before mixing everything together (like you would for fried rice). Cover and let sit while you prepare noodles.
Prepare noodles according to package directions. In a large pot, add noodles and avocado oil (to taste) and stir fry for a few minutes. Add bean sprouts, chicken mixture, tofu (if using), and sauce. Toss together until sauce is distributed evenly. Add chives and peanuts and toss gently.
Serve immediately with toppings of choice!

Mondays are for stocking the pantry! And since our Mondays are for stocking the pantry! And since our bins and labels needed a refresh, I thought I’d share the process 😋 We organized our pantry about a year and a half ago (with the help of @finding.order ) and have never looked back! I was nervous about my ability to stay on top of things but have found that it makes grocery shopping and cooking so much easier because you can actually see what you have and what needs to be restocked.
