It’s going to be a good week, friends! I can feel it. Full bellies and a little fun in the kitchen are just the icing on the cake. And if you make it to the bottom of this meal plan, you’ll find a quick hack, too!
DINNER
- MONDAY: Turkey Chili and Corn Bread
- TUESDAY: Yummy Beef Enchiladas (these take a bit of time so try this weeknight enchilada recipe if you need something quicker)
- WEDNESDAY: Giada’s Crunchy Parm Chicken Tenders (crowd pleaser!)
- THURSDAY: Leftovers! (or Turkey Bowls)
- FRIDAY: Pizza and/or Zucchini Boats
- SATURDAY: Slow Cooker Honey Garlic Chicken with Rice and Veggie of choice
- SUNDAY: Loaded Mediterranean Street Cart Fries (someone reminded me of this recipe last week so I had to add it… so good!)
BREAKFAST:
- Huevos Rancheros (with simple toppings: cheese,avocados, pico, sour cream, cilantro)
- Protein and Fruit Smoothies
- Avocado or PB + Banana Toast
- Waffles
LUNCH:
- Turkey and Cheese Sliders
- Guacamole/Hummus and Chips and Baby Carrots
- Leftover Waffles (with PB+J)
- Whatever fruit looks good at the grocery store :)
SNACK:
- Not too Sweet Chocolate Bread (or any muffins or loaf)
- Yogurt and Toppings
- Apples and PB
- French Fries and Dip
Quick hack for anyone that’s been cutting back on wine (me!), but misses having a glass while making dinner (also, meee!). Try mixing up a mock spritzer (think bubbly water, fresh lime, and a garnish) or pouring some kombucha in a fancy glass (lol, who am I?). Having something fun and festive to sip on has been doing the trick!
