Nothing better than a fall charcuterie platter and with Halloween being this week, I’m hoping for multiple excuses to throw one together. Will be stocking up on fixings at the store (and should probably run to Trader Joe’s). Here’s a shopping list cheatsheet I made several years ago and a menu for the week, below!
OCTOBER 28TH – NOVEMBER 3RD MEAL PLAN:
- COZY MONDAY | Mediterranean Beef Bowls
- TACO TUESDAY | Fish Tacos
- WEDNESDAY | Oven Baked Sliders & Fries
- HALLOWEEN THURSDAY | Butternut Squash Soup & Steak (for my bday dinner) & a Snack Platter (for later)
- FRIDAY (NIGHT LIGHTS) | Pizza & Simple Salad (spring mix, pumpkin seeds, parmesan, olive oil & balsamic)
- SOCIAL SATURDAY| Chicken Pastina Soup
- SUPPER CLUB SUNDAY | Curried Thai Beef with Peanut Sauce
- BREAKFAST | Pumpkin Muffins or these Pumpkin Squares (both recipes sweetened with maple syrup)
- SNACK & LUNCH | Chicken Salad (for easy sandwiches and dip)
