These HEALTHY HOMEMADE SCOTCHEROO BITES are crunchy and sweet, only require 4 ingredients, sweetened by honey, topped with chocolate, and taste delicious. NOTES: Here’s the brown rice (and gluten free) cereal we use and love these silicone muffin tins (mini or standard). Makes clean up so easy… even for egg bites! Also linked below!

HEALTHIER NO-BAKE SCOTCHEROO BITES (ONLY 4-INGREDIENTS!)
YOU’LL NEED:
- 4 cups crispy rice cereal (linked the brand I like to use above)
- 1/4 cup honey
- 3/4 cup peanut butter (plus 2 tablespoon for the chocolate topping)
- 1/2 cup chocolate chips of choice
- 1 teaspoon coconut oil
- OPTIONAL TOPPINGS: course salt, sprinkles, crushed nuts or seeds, etc.
HERE’S HOW:
- Add rice cereal, honey, and peanut butter to the bowl of a food processor. Pulse until ingredients are well blended and mixed together.
- Spoon mixture into the wells of a mini muffin tin and press down (love the silicone one we use — so easy to remove bites — will link above). Place in the freezer while you make the chocolate topping.
- In a small saucepan over low heat, stir together chocolate chips, peanut butter, and coconut oil until melted. Remove from heat.
- Drizzle chocolate mixture over the top of each bite. Sprinkle with topping. Return to freezer until chocolate has hardened completely. If you have any leftover, store in an airtight container in the fridge. Enjoy!
