If I had been on top of things yesterday, I would’ve taken a pic of the yummy meatball subs we had, but instead you get a snap of the cake I baked for Waffles’ first birthday celebration. Can’t remember if I mentioned it on the blog yet, but cake baking is at the top of my “THINGS I WANT TO GET BETTER AT IN 2021” list. Maybe one day I’ll have a recipe of my own to share, but for now I am working my way through the abundance of cakes shared on Sally’s Baking Addiction. So far, no one has complained about my new hobby, but Oz did call me a grandma, lol. I’m 2 cakes in and already feel like my skills have improved a little each time — by the time summer birthday roll around I’ll be ready!
Mkay, enough about cakes… Here’s what’s on the menu in FEBRUARY!
WEEK 1 |
- MONDAY: Meatball subs (make your own or use frozen!)
- TUESDAY: Burrito bowls
- WEDNESDAY: Dad +/or Kids Cook!
- THURSDAY: Thai red curry noodle soup
- FRIDAY: Dinner Out (restaurants open this week for us!) Takeout or Leftovers!
- YAY! SATURDAY!: Lentil Soup
- SUNDAY: Chicken parm meatballs
WEEK 2 |
- MONDAY: Greek cobb salad (leftovers or chicken nuggets for the kids!)
- TUESDAY: Sheet pan quesadillas
- WEDNESDAY: Dad +/or Kids Cook!
- THURSDAY: Teriyaki steak stir fry (or your go to recipe)
- FRIDAY: Takeout or Leftovers!
- YAY! SATURDAY!: Roasted broccoli + white beans (egg or chicken for protein)
- VALENTINE’S DAY!!!: Valentine’s themed snack platter, fondue, or heart shaped grilled pizzas
WEEK 3 |
- MONDAY: Baked Potatoes with toppings
- TUESDAY: Quick chicken fricassee with leftover potatoes (bonus points if you mash them!)
- WEDNESDAY: Dad +/or Kids Cook!
- THURSDAY: Favorite soup + grilled cheese
- FRIDAY: Takeout or Leftovers!
- YAY! SATURDAY!: Instant pot or slow cooker coconut tandoori chicken
- PASTA SUNDAY: Beef wellington turnover
WEEK 4 |
- MONDAY: Breakkie for dinner
- TUESDAY: Chicken tortilla soup (or favorite taco recipe)
- WEDNESDAY: Dad +/or Kids Cook!
- THURSDAY: Chicken satay curry
- FRIDAY: Takeout or Leftovers!
- YAY! SATURDAY: Slow cooker pork roast
- PASTA SUNDAY: Try a new stuffed shell, manicotti, or lasagna recipe!
BREAKKIE |
- MONDAY: Cereal Club or Yogurt or Protein shake
- TUESDAY: Waffles + fruit
- WEDNESDAY: Avocado toast
- THURSDAY: Green smoothie + bacon or sausage, or chia seed pudding!
- FRIDAY: Waffles or baked treat
- SATURDAY: Breakfast quesadillas + fruit — To make quesadillas, layer cheese, scrambled eggs, and whatever meat (deli works) and veggies you have on hand, to a tortilla. Cook how you would normally!
- SUNDAY: Homemade scones or muffins + eggs
LUNCH + SNACKS |
Here’s what I’m planning on keeping (mostly) stocked: Meat, cheese, and crackers, Turkey Sandwich and PB+J fixings, Bagels + Cream Cheese, Raviolis, Chicken Nuggets, costco flautas

I’ve been baking a lot this past year. I’m trying “36 cakes for my 36th year” . I wouldn’t say I’m all that much better of a baker but I’m having fun with it and it has given my kids and I something fun to do together. Half Baked Harvest has some fun recipes! (Maple everything!!)
We fell in love with Chocolate Peanut butter frosting too (from Sally!)…
