It’s eat all the cozy, warm, gooey, comfort food season and I’m here for it extra this year!!! Or maybe I always feel this happy and inspired and forget just how good it feels for all my recipes and go-to’s to feel fresh and new after being off the menu for the last several months.
Because of that, I might have been a little ambitious with the recipes, so be sure to take each week of meals and make it your own! Tuesdays and Thursdays however, are our busiest nights of the week so I tried to keep those extra simple or make ahead. There’s also lots of room for adaptations and of course I made room for National Pasta Day on the 17th, and Halloween on the 31st!
WEEK 1 |
- HAPPY MONDAY: Pan Seared Chicken Breast, (frozen) Sweet Potato Fries, + Kale Caesar salad (sharing a few tips at the bottom of post)
- EASY TACO TUESDAY: Quesadillas + Rice (Throw a few chicken breasts in the slow cooker for a hearty addition)
- WE HEART WEDNESDAY: Asian Beef Bowls (or your favorite Asian inspired dish from Trader Joe’s, etc.)
- SLOW COOKER THURSDAY: Slow Cooker Chicken Pumpkin Curry

- YAY! SATURDAY!: Miso Salmon with Sesame Ginger Noodles (we love Eva’s Wild Salmon!)

- EASY TACO TUESDAY: Week Night Black Bean Soup
- WE HEART WEDNESDAY ;): Breakkie for Dinner

- YAY! SATURDAY! NATIONAL PASTA DAY: Butternut Squash Pasta Carbonara
- NOT NOODLE SUNDAY: French Dip Sandwiches (homemade or store-bought)

- HAPPY MONDAY: Muffin Tin Meatloaves (a family favorite!)
- EASY TACO TUESDAY: Homemade or Costco Flautas
- WE HEART WEDNESDAY ;): Grilled Cheese Sandwiches or BLTs + Cobb Salad
- SLOW COOKER THURSDAY: Pineapple Pulled Pork Sandwiches (or make them tacos 😜)

FESTIVE FALL CEASAR SALAD: A couple tips to make your Caesar salad taste more like fall — swap out Romain lettuce for Baby Kale, mix your dressing with olive oil so it’s a little lighter, toss in pumpkin seeds (bonus if roasted), dried cranberries and feta cheese are a nice touch too!
