Sharing a super easy Ceviche recipe today as well as a (skinny) Pink Paloma recipe on IGTV. Both are just the thing for your spring and summer quarantine snacky-snacks or zoom cocktail hours! Here’s hoping we’ll be back to sharing happy hours IRL, soon but in the meantime there’s no need to wait!
If this little round up of freshy-fresh ingredients doesn’t make you excited to make this, I can’t help you. However, if shrimp isn’t your thing I would like to suggest omitting the little crustaceans along with some of the orange juice and just making a pico style dip! Maybe try doubling the tomatoes + avocados too. But depending on your taste buds and preferences I highly suggest making this recipe your own and playing around with how much of each ingredient to put in!
MY SUPER SIMPLE CEVICHE RECIPE
You’ll Need:
- 1/2 lb. pre-cooked tail-off shrimp, fresh or frozen
- 1-1/2 or 2 navel oranges, juiced
- 1 or 2 limes, juiced
- 1/2 lemon, juiced
- 1/2 cucumber, peeled and finely chopped
- 1 or 2 Roma tomatoes, remove most seeds and dice (or a big handful of cherry tomatoes)
- 1/2 onion, white or purple or a shallot, chopped
- 1 or 1/2 bunch of cilantro, chopped
- 1 jalapeño, seeded + finely chopped (technically optional but it balances the orange juice so well I highly recommend adding at least a little!)
- 1 avocado, diced
- salt + pepper to taste
- Tortilla chips for serving
To Make:
- PREP + MARINATE SHRIMP: If bigger shrimp, cut into bite sized pieces. In a medium bowl combine shrimp and juice from oranges, lime(s), and lemon. Cover and let sit in fridge for 1 hour.
- PREP REMAINING INGREDIENTS: Dice up cucumber, tomatoes, onion, cilantro, jalapeño, and avocado.
- COMBINE + SEASON: When the hour is up, toss everything together to taste. Finish with some salt and pepper to taste. That’s it! Serve with tortilla chips…. and a Paloma ;)

This girl makes me so happy! She’s never far, loves to help in the kitchen (or anywhere even if she complains about it, lol), but is also fiercely independent.
