Can I tell you a secret?

I hate winter. It’s long, dark, cold, and wet (if you live in the PNW like me). BUT, I continue to hear the words “MAKE THE MOST OF IT” pop into my head so you know what!? That is what we’re going to do! Hoping this JANUARY EDIT will help set the tone. You’ll also find an unintentional French theme running through many parts of this month’s roundup, and future blog posts… it’s going to be a good month!

JANUARY MOOD:

Après is our theme this month – après ski, après snow, après long day (lol), après work, après adulting, après running errands… you get the idea. We’re here for the activities, but also for the after party. Especially because winter can be such a grind.

WELLNESS + OILS:

On that note, did you know that FUN is the fastest way (aside from physical touch) to increase your immune system function!? So during the cold and flu season that is winter, let’s remember to laugh and enjoy our friends and family. Later this week, I’ll be diving into more ways to support our health!

JANUARY INTENTIONS:

I’ll share my word of the year a little later, but for this month let’s try a few things:

  1. Journaling! It’s been years since I journaled consistently. Forgot how productive and therapeutic it can be!
  2. Find our sweet spot… In other words, stop worrying about what we think we should be doing (should-ing ourselves) and instead be true to what I really want.
  3. Remember that God’s Word is a “lamp for my feet, and a light on my path.” – Psalm 119:105

Gravitating towards slip skirts, sweaters, and boots, sweater dresses and boots, athleisure with socks (these!) and a puffer, and colorful French manicures! Lots of inspiration on the pinterest board… Looking forward to sharing other fun looks this month!

HOME DECOR:

You’ll find me purging, organizing, and doing some toy decluttering. Last month I tackled our unmanageable stack of board games and puzzles, and will be sharing the process next week. I also have plans for adding some new art to our walls, which is a FAQ, so will be sharing more on that too!

IN THE KITCHEN:

Loving our new dutch oven so plan on continuing with all the soups and maybe some homemade bread. Stay tuned for a delicious (and easy) French onion soup recipe!

Perfection is overrated unless your talking about Perfection is overrated unless your talking about waffles 🧇 and you know we take waffles seriously around here since we named our dog after them! Recipe is below to save for later or you can comment WAFFLES and I’ll send the recipe straight to your DMs! 

CRISP & FLUFFY HOMEMADE WAFFLE RECIPE

YOU’LL NEED:
2 cups flour
1 tablespoon baking powder
2 tablespoons sugar
2 eggs (divide egg and yoke)
1-2/3 cup whole milk
1/3 cup butter, melted
2 teaspoons vanilla extract
TOPPING IDEAS: butter, maple syrup, whipped cream, *sprinkles, peanut butter, jam, *cacao nibs, chocolate chips, powdered sugar, berries, bananas, cinnamon, sliced peaches, fried or scrambled egg, etc.

HERE’S HOW:
Preheat your waffle iron and melt butter over low, if using stovetop.
In a large bowl, combine all dry ingredients: flour, baking soda, baking powder, and sugar. Whisk together.
Divide the egg yolk and whites into two separate medium sized bowls.
Add the milk, butter, and vanilla extract to the yolk bowl and mix to combine.
With a hand or stand mixer, beat the egg whites on medium-high until stiff peaks form. Should only take a couple minutes and makes the waffles so fluffy!
Pour yolk and milk mixture into the dry ingredients and stir or whisk until combined, being careful not to over-mix. Add the egg whites and fold them into the batter gently.
Heat oven to 250-275 degrees to keep cooked waffles warm and crisp. Lightly grease waffle iron (I like to brush on a little butter). Use a measuring cup to pour batter onto waffle iron, until wells are almost covered. Close the iron and cook for about 4 minutes or until golden brown. (Tip: This is a great time to prep toppings or tidy up the kitchen. If you’re like me though, be sure to set a timer!)
Place cooked waffles in a single layer, directly on rack in oven. When ready, top and serve!
