A few things before we jump into this month’s meal plan:
- Happy first day of October!!!!
- Can we call the graphics in this post “kitchen towels I would design if I designed kitchen towels”? Maybe Anthropologie would be interested??? Let’s email them! Ha!
- Over the weekend I left my little fam for about 24 hours and attended a design workshop with Oh Joy! in L.A. and am now feeling like I know what I want to do with my life, lol. Funny how one little step forward (especially when you’re feeling stuck) can help so much… More on that soon!
Now that we’re all caught up (tell me how your week is going in the comments!), here’s the plan for the month!
WEEK 1
M | we ate Jersey Mikes :)
TU | copycat chipotle chicken burrito bowls (or just go get chipotle)
W | this creamy tuna casserole or sloppy joe cornbread casserole (just because kids tend to love casseroles and I tend to love having the oven on)
TH | easy fried rice… or try to grab a bag for the freezer section (TJ’s is our fave) and add chicken or egg
F | we’re having dinner with friends but these individual baked pasta would be a good friday night din-din.
SA | slow cooker apricot chicken
SU | mini turkey meatloves or this more traditional version, yum!
WEEK 2
M | these yummy rotisserie chicken panini’s with bacon (going to add roasted red peppers, and basil and/or pesto as topping options) and some homemade slow cooker apple sauce (or cheat and warm a jar of applesauce on the stove and sprinkle in a little cinnamon and sugar — my kids sing my praises every time I do this)
TU | baked chilaquiles (or opt for nachos!)
W | eat out or takeout, please!
TH | chicken caesar salad (try this recipe if you’re feeling fancy) and tomato basil soup
F | Oz is coming home for the weekend, the kids are off for 4 days + it’s Italian night so I’ll probably make a fam favorite — tortellini soup or chicken -parm meatballs
SA | slow cooker thai chicken soup
SU | mandatory sushi date before Oz heads back to school
WEEK 3
M | egg and sausage breakfast sandwiches (or this yummy starbucks copycat) + a side salad
TU | easy steak fajitas
W | eat out or takeout, please!
TH | grilled turkey + cheese or apples + ham
F |this pasta pomodoro recipe was so good, homemade and still so simple — add frozen meatballs if you have meat eaters :)
SA | slow cooker chipotle orange street tacos (chicken or pork)
SU | dad’s choice or leftovers! (mama needs a night off!)
WEEK 4
M | OG ramen cabbage salad and chicken nuggets :)
TU | blackened fish tacos
W | eat out or takeout, please!
TH | moroccan chicken skewers with pita bread, tzatziki and crudités
F |homemade mac + cheese + halloween movie night!
SA | chrissy teigen’s sleepytime beef stew + mashed red potatoes (just added the cookbook with this recipe in it to my amazon order and think you should do the same!)
SU | should be a good night for leftovers! if not, make breakfast for dinner or skip to monday’s meal.
WEEK 5
M | individual chicken or turkey pot pies (practicing for thanksgiving leftovers!)
TU | flautas (from costco or taquitos) with guac + black beans
W | papa murphy’s pizza (pizza is our “holiday eve” tradition!)
TH | the pioneer woman’s chili for an easy (+ cozy) pre-and-post trick or treat meal… don’t forget the cornbread!
BREAKKIE | cinnamon squares + scrambled eggs, egg + sausage breakfast sandwiches, cereal, chunky monkey protein shakes (this protein powder is the secret sauce), bananas + strawberries
LUNCH | grilled cheese (they stay warm in a thermos), sandwich kabobs, pb+j or honey or banana, meatballs, leftovers (so many good ones this month!), turkey + cheese sandwich, these lunchbox notes!
SNACK | apples + dip, any of these fun snacks, edamame, string cheese + apples, pretzels, yogurt, guacamole + chips, popcorn (can’t quit it), Zbars + fruit leathers
