Tomorrow starts our final week of summer vacay (noooooo!) so while I’m working on getting the kids used to waking up and (the tricky part) out the door in the morning, I’ll be working on getting myself back into an evening routine (goodbye 8pm dinners). Figured a meal plan would help. I’m also on a mission to expand my list of go-to slow cooker dinners so you’ll notice I added 3 new ones to the plan this week. Links and details below!
M | cauliflower rice slow cooker black beans and roasted sweet potatoes (and probably some homemade coconut chicken tenders)
T | we’ll be at a ballgame so let’s do hot dogs and brauts and a green salad (or eat out!)
W | falafel with matcha tahini sauce and chicken satay (but you can skip the peanut sauce and use the tahini!)
TH | slow cooker chipotle orange street tacos (use pork if you need a break from chicken) with beans + rice (taco thursday?)
F | grilled cheese + california cobb salad
SA | eat out! maybe thai food :)
SU | slow cooker braised beef with mashed potatoes and spring mix salad
BREAKKIE | we made these hash brown egg nests with avocado and will definitely be making them again, as well as breakfast banana splits and muffins (here’s a base recipe)
LUNCH + SNACK | bagels and cream cheese, turkey + salami, apples and almond butter, turkey or tuna melts, berries, raviolis, cucumbers, banana grahams (I shared on plain jane’s blog), pirate booty
