Full disclosure, this pasta sauce is only loved by 2 or 3 people in my family so I always serve it with white or red sauce as an option. Luckily it’s so easy to make that it doesn’t add much time in the kitchen and is worth a little bit of effort. CREAMY AVOCADO PASTA RECIPE
This pasta sauce is full of flavor and healthy ingredients, and is so easy to whip together!
YOU’LL NEED:
- 16 ounces pasta of choice (I made a homemade gf pasta I'll link in this pose)
- 2 small avocados
- 1 cup fresh basil leaves
- 1 lemon, juiced
- 2 cloves garlic
- 1/4 cup olive oil (plus more to thin sauce if needed)
- salt & pepper, to taste
- TOPPINGS: parmesan, basil, diced tomatoes, lemon wedges (as desired)
HERE’S HOW:
- Start preparing your pasta according to recipe or package directions.
- Place remaining ingredients in the blender and blend until smooth and creamy, adding olive oil and/or water in small amounts as needed. Salt (and pepper) to taste.
- Toss with pasta, top, and serve!
Used this recipe to make gluten free pasta and was pleasantly surprised at how simple it was! Worth a try if you have a little extra time.
