CREAMY AVOCADO PASTA RECIPE
This pasta sauce is full of flavor and healthy ingredients, and is so easy to whip together!
- 16 ounces pasta of choice (I made a homemade gf pasta I'll link in this pose)
- 2 small avocados
- 1 cup fresh basil leaves
- 1 lemon, juiced
- 2 cloves garlic
- 1/4 cup olive oil (plus more to thin sauce if needed)
- salt & pepper, to taste
- TOPPINGS: parmesan, basil, diced tomatoes, lemon wedges (as desired)
Start preparing your pasta according to recipe or package directions.
Place remaining ingredients in the blender and blend until smooth and creamy, adding olive oil and/or water in small amounts as needed. Salt (and pepper) to taste.
Toss with pasta, top, and serve!
