SIMPLE STUFFED BELL PEPPER MELTS
The healthy snack or lunch recipe you've been looking for! Full of flavor and packed with protein, fiber, and healthy fats that balance blood sugar, keep you full, and boosts metabolism. Tastes like something you slaved over in the kitchen, but only take a few minutes of prep and 15 minutes in the oven.
YOU’LL NEED:
- 1 Red (orange or yellow) bell pepper, cut into 4ths
- Shaved (or sliced) turkey meat (or other deli meat of choice)
- White cheddar cheese (or cheese of choice), sliced or grated
- 1 avocado, diced or mashed
- salt and pepper, to taste
HERE’S HOW:
- Place bell peppers, cut side up on cookie sheet or baking dish. Place in oven on middle rack and broil for 5 minutes.
- Remove peppers from oven, layer/fill with deli meat, and top with cheese.
- Return to oven on the middle rack and broil for another 10 minutes or until the cheese has melted and edges are browned. Top with avocado and a sprinkle of slat and pepper, and ENJOY!
