My lunch dates at Culinary Dropout in Gilbert! Would recommend!
Giving all the yummy food we ate on our trip (and the break from cooking) full credit for this months meal plan. Feeling really excited to get in the kitchen to try new recipes and also plan on getting the pantry and fridge organized this month too. Might even go nuts and try my hand at meal prepping — fruits, veggies, lunch salads, overnight oats, etc!?!? If you have any tips, please share below!

WEEK 1 |
- MONDAY: Broccoli Cheddar Chicken Fritters (still haven’t committed, but have my eye on this air fryer!)
- TUESDAY: Sweet Potato + Asparagus Grain Bowl (it calls for green beans but the asparagus looks so good right now so swapped it… could add fried egg for protein)
- WEDNESDAY (Cinco de Mayo): Mexican Street Tacos (Guac, Palomas, + Ceviche for Happy Hour)
- THURSDAY: Takeout or Leftovers!
- FRIDAY: Cutie Platter (Here are some ideas!)
- YAY! SATURDAY!: Steak Salad + Warmed bread with Butter
- SUNDAY (Mother’s Day): Dad’s Turn to Cook (Roasted Veggies + Grilled Chicken or whatever mama wants!)

- MONDAY: Detox Moroccan Lentil Soup
- TUESDAY: Chicken Tortilla Soup
- WEDNESDAY: Mediterranean Orzo Salad
- THURSDAY: Takeout or Leftovers!
- FRIDAY: Reuben Pretzel Sliders and a salad
- YAY! SATURDAY!: California Cobb Salad
- SUNDAY: Dad’s Turn to Cook
WEEK 3 |
- MONDAY: Salmon Pesto Pasta
- TUESDAY: Costco flautas, or quesadillas, or nachos
- WEDNESDAY: Loaded BBQ Chicken Quinoa Salad
- THURSDAY: Takeout or Leftovers!
- FRIDAY: Grilled Pizza + Salad (grab some inspiration from Pizzeria Bianco’s menu.)
- YAY! SATURDAY!: Grilled Kabobs + smashed baby potatoes
- PASTA SUNDAY: Dad’s Turn to Cook
WEEK 4 |
- MONDAY: Stuffed Peppers
- TUESDAY: Sheet Pan Fajitas or Chipotle 😜
- WEDNESDAY: Simple Bolognese
- THURSDAY: Takeout or Leftovers!
- FRIDAY: Quick Chicken Ramen Noodle Stir Fry
- YAY! SATURDAY: Classic burgers, fries, + milkshakes
- SUNDAY: Dad’s Turn to Cook
BREAKKIE |
Toast and toppings (avocado, nut butter and banana or berries), yogurt parfaits, overnight oats, breakfast cookies, smoothies + eggs.
LUNCH + SNACKS |
Prepped fruit (cantaloupe + berries) veggies (carrots, cucumbers, etc.) and salads, chicken salad sandwiches, salami + cheese + crackers, popcorn, fries + dips, homemade strawberry lemonade for fun.
