In my healthy girl era and keeping a stash of these in the freezer has been a life saver when the sweet tooth hits. The crunchy chocolate and soft banana are the perfect texture combo (like a bon-bon!) and the chocolate, peanut butter, and banana flavors together can do no wrong.
Serves 6(servings of 5)
YOU'LL NEED:
3bananas(make sure they aren't overly ripe)
*natural peanut butter (refrigerated for a thicker consistency)
1/2cupchocolate chips of choice
2teaspoonscoconut oil
optional:toppings of choice (we used sprinkles for the kids and hemp heart seeds for me)
HERE'S HOW:
Peel and slice bananas into 1/4 inch (approx.) rounds.
Line a platter, cutting board, or cookie sheet (that can fit in your freezer) with parchment paper. Spread or spoon peanut butter on to a slice of banana and top with another banana, making a little sandwich. Place on prepared platter. Repeat until all banana slices have been used. Freeze for 45 to 60 minutes.
Just before removing bananas from freezer, melt chocolate chips and coconut oil together using a double boiler or the microwave. If chocolate is really hot, let cool slightly. Remove banana sandwiches from fridge, dip in chocolate, place on parchment paper tray, and sprinkle with topping (if desired).
Repeat until all banana bites have been dipped and sprinkled. Return to freezer until chocolate has hardened - about 15-20 minutes.
Enjoy immediately or store in airtight and freezer-safe container for up to 2 months.
Notes
*If using a natural peanut butter that can get a runny texture when sitting out at room temp, be sure to refrigerate before using! This helps keep the peanut butter on the banana and cut back on the mess.
